Introducing our latest offering: the Volcan Orizaba Criollo, a meticulously crafted coffee roasted specifically for filter brewing. Sourced from the fertile slopes of Veracruz, Mexico, this single-origin bean is cultivated by small farmers in the Orizaba Volcano region at an elevation of 1,660 meters. The Criollo varietal, known for its exceptional quality, undergoes a washed fermentation process, enhancing its natural flavors. In the cup, you’ll experience delicate wine notes, hints of raisins, smooth citrus acidity, and undertones of almonds and sugar cane, culminating in a well-rounded body and a lingering finish. This coffee embodies the rich heritage and dedication of its producers, offering a truly distinctive taste experience.

Process
Washed Fermented
- Cherries are harvested above 20 brix
- Cherries are soaked in water for 2 hours (Cleannig, sorting , hydrating)
- Coffee depulped leaving 75% of mucilage
- Aerobic fermentation (18 hrs)
- Coffee is pre-dried on African beds for 8 days
- Final slow drying on Guardiolas (36 hrs)
- Stabilization under shade, (fique bags 4 days)
- Coffee is finally stored on grain pro bags for the final stabilization (8 days)
- Coffees are cupped lots conformed, and samples selected for shipping.
